  • 1/2 cup (110g) brown sugar
  • 30g butter, chopped
  • 1/2 tsp vanilla essence
  • 2/3 cup (160ml) thickened cream
  • 1/3 cup (45g) salted peanuts, coarsely chopped

  1. Step 1

    Combine sugar, butter and vanilla in a heavy-based saucepan over low heat. Cook, stirring constantly, for 2-3 mins or until the sugar dissolves completely. Continue cooking, stirring, for 6-7 mins or until the mixture is golden. Remove from heat.
  2. Step 2

    Gradually add the cream and stir to combine. Return to the heat. Add the peanut and cook for 4-5 mins or until the sauce thickens. Set aside to cool to room temperature. Store in an airtight jar in the fridge for up to 1 week.

    Serve with waffles and vanilla ice cream
